Grilled Mustard-Basil Chicken
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- 2 Tbsp. torn fresh basil leaves
- 1 clove garlic, sliced
- sea salt and pepper to taste
Instructions
- Heat grill to medium-high heat. In a small saucepan, heat olive oil, basil leaves and garlic over low heat for about 5 minutes. Remove the oil from the heat and let stand for 5 minutes, then strain the basil and garlic from the olive oil. Mix together the olive oil and the mustard, along with sea salt and pepper to taste. Carefully coat the grill with oil using a paper towel. Place the chicken breasts on the grill and brush liberally with the mustard mixture. Turn the breasts over and baste again. Continue to turn and baste every 5 minutes until the internal temperature measures 165 degrees.
