Tuna Salad Pita Pockets
A quick and light dinner for a busy weeknight or dinner on-the-go.
Ingredients
- 2 cans (5 oz.) tuna packed in water
- 2 tbsp. sweet relish
- 3 tbsp. olive oil mayonnaise
- 1/2 cup sliced celery
- 1 tsp. lime juice
- 1 tbsp. chopped fresh cilantro
- 2 pita pockets, cut in half
- 1 cup shredded romaine lettuce or cabbage
Instructions
- Drain excess liquid from the tuna. In a bowl, mix together the tuna, relish, mayonnaise, celery, lime juice and cilantro. Fill each pita half with 1/4 cup shredded lettuce or cabbage and 1/4 of the tuna mixture.
