Stuffed French Toast
Breakfast for dinner is one of my favorite comfort foods. Choose sweet*- or savory-stuffed options for a quick dinner.
Ingredients
- 8 slices French bread, cut 1 1/2 inches thick
- 8 ounces Turkey sausage, cooked
- 1 cup Shredded cheddar or Swiss cheese
- 2 eggs
- 1/2 cup milk
- 1 tsp. sugar
- 1/4 tsp. cinnamon
Instructions
- Cut a pocket in the crust of each slice of bread.
- Toss together sausage and shredded cheese and put in pocket.
- Beat eggs, milk, sugar and cinnamon together in a shallow bowl.
- Dip both sides of the bread; cook on a greased hot griddle or pan until browned on both sides.
- Serve with maple syrup.
- * Sweet Stuffing Option:
- Substitute 8 ounces of softened cream cheese blended with 1/3 cup sugar and 1 teaspoon vanilla for the sausage and shredded cheese.
- You can also add 1/2 cup pureed berries or peaches to the cream cheese before stuffing.
