Spinach Lasagna
A hearty meatless meal Serve it with garlic bread and a veggie-filled tossed salad. Using uncooked lasagna noodles saves time -- and gives you a few less dishes to wash, too.
Ingredients
- 1 pkg. lasagna noodles
- 1 pkg. frozen spinach, thawed
- 4 cups marinara spaghetti sauce
- 2 lbs. ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 each egg
Instructions
- Preheat oven to 350 degrees.
- In a bowl, mix together the ricotta cheese, 2 cups of the mozzarella cheese, and the egg.
- Squeeze some of the excess moisture from the thawed spinach.
- Spread 1/2 cup of the marinara sauce on the bottom of a 9x13 baking dish.
- Place 3 lasagna noodles on top of the sauce, then spread 1/2 of the cheese mixture and 1/2 of the spinach evenly over the uncooked noodles.
- Top with 1 cup of sauce.
- Place another layer of noodles on the sauce and repeat the cheese, spinach and sauce again.
- Add a final layer of noodles and cover them with sauce.
- Top with the remaining cup of shredded mozzarella.
- Cover with foil and bake for 40 minutes.
- Remove foil and cook for 10 more minutes to brown the cheese slightly.
- Let stand for 5-10 minutes before serving.
