Slow Cooker Taco Soup
It's a quick and easy way to fix a Mexican dinner that won't have you stuck in the kitchen. Instead, let your slow cooker do the work! You could also serve this dish with warmed flour tortillas.
Ingredients
- 1 pound ground beef
- 2 cans tomatoes, crushed, 15 oz.
- 1 can corn
- 1 can black beans
- 1 can kidney beans
- 1 pkg. ranch dressing mix
- 1 pkg. taco seasoning
- 1/2 cup red onion, chopped
- tortilla chips , crushed
- sharp cheddar cheese , shredded
- sour cream, reduced fat
Instructions
- Brown ground beef and drain. Combine all of the ingredients except the tortilla chips, sharp cheddar cheese, and sour cream in a slow cooker and cook on low for 5-6 hours. Serve with remaining ingredients.
