Slow Cooker
Whether you want dinner ready when you get home, or a no-fuss crowd-pleasing meal, this is it.
Ingredients
- 2 1/2 pounds beef roast
- 1 cup tomatoes, diced
- 1 cup salsa
- 1 cup chopped sweet onion
- 2 cloves garlic, minced
- 1 Tbsp. chili powder
- 1 Tbsp. honey
- 3/4 tsp. cumin
- 1 1/2 cups beef broth
- 1 cup shredded cabbage
- 1/2 cup sliced tomatoes
- reduced fat sour cream
- 4 each crusty French rolls
Instructions
- Place beef in a 5-quart slow cooker.
- Add the diced tomatoes, salsa, onion, garlic, chili powder, honey and cumin.
- Pour the broth over the top.
- Cook on high for 1 hour, then reduce heat to low and cook for 8 additional hours.
- Remove the lid for the last 30 minutes of cooking to thicken the sauce (optional).
- Remove beef from the slow cooker and shred with two forks.
- Remove half of the sauce from the slow cooker and reserve to pour over rice.
- Return shredded beef to remaining sauce and cover to keep warm.
- Serve on crusty French rolls with shredded cabbage, sliced tomato and sour cream.
