Slow Cooker Ruben Sandwiches
Ingredients
- 1 1/2 pounds corned beef brisket , cooked
- 1 jar sauerkraut , drained
- 1/2 cup thousand island salad dressing
- 2 cups Swiss cheese , shredded
- 8 slices Rye bread , toasted
Instructions
- Place meat in slow cooker.
- Spread sauerkraut over the meat.
- Drizzle the 1/2 cup salad dressing over all.
- Cover and cook on low-heat setting for 2 to 3 hours or on high-heat setting for 1 to 2 hours.
- Remove meat from cooker and place on cutting board.
- Thinly slice meat against the grain.
- Return sliced meat to the cooker; stir to combine with the cooking liquid.
- Using a slotted spoon, spoon corned beef mixture onto toasted bread.
- Top with cheese and if desired additional salad dressing.
