Slow Cooker Pork Roast with Spiced Peach Sauce
A summery pork dish that won't heat up your kitchen to prepare
Ingredients
- 3 pounds boneless pork loin roast
- 1/2 teaspoon granular onion
- sea salt and pepper to taste
- 3 peaches, peeled and halved
- 1/4 cup sliced onion
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 cup chili sauce
- 2 tablespoons packed brown sugar
- 3 tablespoons apple cider vinegar
- 1/2 teaspoon cinnamon
- pinch of ginger and nutmeg
- 1 tablespoon cornstarch
Instructions
- In a small saucepan heat 1/2 cup water and 1/2 cup granulated sugar to boiling. Continue to boil until sugar dissolves, about 3 minutes. Remove from heat. Meanwhile, season the roast with granular onion, sea salt and pepper. Spray the slow cooker with nonstick cooking spray. Place the roast in the slow cooker. Whisk together the sugar syrup, chili sauce, brown sugar, vinegar, cinnamon, ginger and nutmeg. Pour over the meat and place the peaches and onion slices on the meat. Cook on low for 6 hours.
- When the meat is finished cooking, remove it from the slow cooker. Allow it to rest for 10 minutes. Dissolve the cornstarch in 2 tablespoons of water. Remove the peaches and most of the onion slices with a slotted spoon and reserve. Pour the liquid into a small saucepan and bring to a boil. Add the cornstarch mixture and cook for 30 seconds, stirring constantly until the sauce thickens. Slice meat and place peach slices on top. Serve with the sauce on the side.
