Slow Cooker Carne Asada
This is a fix-it-and-forget-it main dish.
Ingredients
- 2 pounds beef (flank steak, brisket, etc.)
- 2 cloves garlic, minced
- 1 small onion, sliced
- 2 cans stewed tomatoes, Mexican recipe
- ΒΌ cup water
- 12 corn or flour tortillas, warmed
Instructions
- Take beef and rub minced garlic into it.
- Place in a slow cooker with the onion, tomatoes, and water.
- Cook on low for about 8 hours, or until the meat is tender.
- Remove the beef from the slow cooker and shred with two forks.
- Return the beef to the slow cooker to keep warm.
- Serve with warmed tortillas, guacamole, shredded cheese and sour cream.
Notes
I've also made this recipe with leftover brisket or roast -- just cut the cooked beef into bite-sized piecesand let the flavors blend in the slow cooker for a couple of hours before serving it. If you want some extra heat, add a finely chopped and seeded jalapeno pepper.
