You can use a less expensive cut of meat for this recipe; the slow cooking will make it nice and tender by the time you're ready to serve it. The chipotle will give the beef a little more kick if you prefer spicier foods.
Ingredients
- 2 pounds beef roast
- 1 Tbsp ground cumin
- 2 tsp granular garlic
- 1 tsp dried oregano
- 1 tsp ground chipotle (optional)
- 1/2 cup water
- 3 cups salsa
- tortillas (flour or corn)
- 8 oz sour cream
- 1 cup shredded cheddar cheese
- salsa for serving
Instructions
- Season roast with cumin, garlic, oregano, and chipotle. Place it in the bottom of slow cooker, then add water and salsa. Cook on low for 8 hours. Remove the roast from the slow cooker; cut into segments and shred. Return the shredded meat to the slow cooker to reheat for 15 minutes. Serve the shredded beef with tortillas, sour cream, shredded cheese and additional salsa.
