Shredded Chicken Gyros
Quick to make variation on a delicious classic
Ingredients
- 2 cups shredded cooked chicken
- 4 each pita
- 3/4 cup tomato , diced
- 1/4 cup onion, red , chopped
- 6 oz. Greek yogurt, plain
- 1/2 cup cucumber , finely chopped
- 2 cups lettuce , shredded
Instructions
- Peel the cucumber and remove seeds.
- Finely chop the cucumber and mix into the Greek yogurt, set aside.
- Warm the chicken and pitas.
- Place about 1/2 cup of the chicken in each pita; top with lettuce, tomato and red onion.
- Serve with the yogurt mixture.
