Shredded Chicken Gyros

Quick to make variation on a delicious classic

Ingredients

  • 2 cups shredded cooked chicken
  • 4 each pita
  • 3/4 cup tomato , diced
  • 1/4 cup onion, red , chopped
  • 6 oz. Greek yogurt, plain
  • 1/2 cup cucumber , finely chopped
  • 2 cups lettuce , shredded

Instructions

  1. Peel the cucumber and remove seeds.
  2. Finely chop the cucumber and mix into the Greek yogurt, set aside.
  3. Warm the chicken and pitas.
  4. Place about 1/2 cup of the chicken in each pita; top with lettuce, tomato and red onion.
  5. Serve with the yogurt mixture.
