Shepherd's Pie
Shepherd's Pie uses some leftover beef and a bunch of other ingredients for a meal-in-one.
Ingredients
- 2 cups mixed vegetables , frozen
- 2 Tbsp. olive oil
- 1/2 cup onion, yellow , chopped
- 2 cups beef , cooked
- 1 pound potatoes , diced
- 1 tsp. sea salt
- 2 Tbsp. butter
- 1/4 cup sour cream
- 2 Tbsp. onion, green
- 1/4 cup sharp cheddar cheese , shredded
- 2 cloves garlic , sliced
- 1/2 cup beef broth
Instructions
- Thaw frozen vegetables.
- Place diced potatoes in a pot large enough to cover with 1 to 1 1/2 inches of water.
- Add salt to the water and boil potatoes until a fork easily pierces them.
- Drain water and mash potatoes with butter, sour cream, green onion and shredded cheese.
- In the mean time, heat oil in a skillet over medium heat.
- Saute onion and garlic until translucent, about 5 minutes.
- Add mixed vegetables and beef broth.
- Cook for 5 minutes, then add the cooked beef to warm for about 3 minutes.
- Pour beef mixture into a greased casserole dish.
- Top with mashed potatoes.
- Bake in a 400 degree F oven for about 30 minutes, broiling the potatoes for 2-3 minutes to finish browning if necessary.
