Parmesan Crusted Salmon
Quick, relatively healthy, and elegant-looking with minimal effort. My kids love to eat the salmon because of the flavor-filled crust that is broiled on top.
Ingredients
- 4 ea. skinless salmon fillets
- 1 Tbsp. lemon juice
- ½ c. bread crumbs (I frequently used the ends of a loaf of whole wheat bread that I grind in my food processor)
- ¼ c. grated parmesan or Romano cheese
- ¼ c. chopped parsley
- 1 tsp. granular garlic (or garlic powder)
- 1 Tbsp. olive oil
- sea salt and pepper to taste
Instructions
- Lightly grease a broiler pan and place the salmon fillets on it.
- Brush lemon juice on the top of each fillet.
- In a medium-sized bowl, combine the remaining ingredients.
- The mixture should look like coarse crumbs once the olive oil has been combined thoroughly.
- Set your oven to the broil setting and place the rack one level down from the top.
- Broil the fillets without the bread crumb mixture for about 5-7 minutes, depending on the thickness of the fillets.
- Remove the pan from the oven and spread the crust evenly over the fillets.
- Broil for an additional three minutes, or until the crust is browned.
- Serve immediately.
