Italian Chicken Simmer
It's the time of year when we all crave some warm comfort food. This one-dish dinner goes great with pasta or rice.
Ingredients
- 1 Tbsp. olive oil
- 1 1/2 pounds chicken quarters
- 1 can tomatoes, crushed with basil, 28 oz.
- 1 tsp. dried oregano
- 1/4 cups tomato paste
- 1 clove garlic, minced
- 1/4 cup Parmesan cheese
- 1/2 cup mozarella cheese , shredded
Instructions
- Remove the skin from the chicken quarters.
- Heat the olive oil in a non-stick skillet over medium-high heat.
- Brown chicken quarters (cut them apart before browning if you like) for 10 minutes.
- Add tomatoes, oregano, tomato paste and garlic; mix well.
- Cover and simmer on medium low for about 20 minutes, or until chicken registers 165 degrees F.
- Remove from heat and stir in Parmesan cheese.
- Sprinkle chicken with shredded mozzarella before serving.
