Hearty Beef Soup
Ingredients
- 1 pound beef stew meat
- 2 Tbsp. flour
- 1 Tbsp. canola oil
- 1/2 cup sliced onion
- 1 clove minced garlic
- 1 cup frozen corn kernels
- 1 cup sliced carrots
- 2 cups diced white potatoes
- 1 can (28 oz) crushed tomatoes
- 3 cups beef broth
Instructions
- Heat oil in a skillet over medium heat. Place the stew meat and flour in a resealable bag and toss to coat the stew meat with the flour. Brown the meat in the skillet and transfer the browned meat to a slow cooker with a slotted spoon. Add the onion and garlic to the pan drippings, adding a bit more oil if necessary. Cook over medium heat for 5 minutes, until onion starts to soften. Transfer the contents of the skillet, including the drippings, to the slow cooker as well. Add the remaining ingredients and cook on low for 5-6 hours.
