Grilled Mixed Vegetables
The beauty of this recipe is its versatility. Experimenting with different vegetable blends might be a great way to introduce new veggies to your family. I’ll let you in on a little secret… I wouldn’t eat cooked squash until I tried this recipe at a friend’s house last summer. I didn’t want to be impolite, so I tried some and absolutely loved it! A little olive oil, some spices sprinkled over the top, and you have some wonderfully healthy vegetables! No matter what vegetable combinations you try, always add the sweet onion. It is the most important ingredient.
Ingredients
- 1 medium sweet onion, cut into large slices
- 1 small zucchini, cut into thin slices
- 1 small summer squash, cut into thin slices
- 1 clove garlic, sliced very thin
- 1 red bell pepper, cut into slices
- 2 Tbsp. olive oil
- ½ tsp. oregano
- salt and pepper to taste
Instructions
- Place cut vegetables into a large bowl.
- Toss with olive oil and spices.
- Using heavy duty aluminum foil, make a large foil tent by placing the vegetables in the center of the foil and folding the edges to create the “tent.”
- Place on the grill and cook until vegetables are crisp-tender.
- Be careful opening the tent as there may be a build-up of steam.
