Lemon Dill Chicken
I like this recipe because it's made on the grill but offers a unique flavor. Because it's cooked in a foil tent, you can grill it with other dishes without compromising flavors.
Ingredients
- 6 each boneless, skinless chicken breast halves
- 2 lemons
- 6 sprigs fresh dill (or1 tablespoon dried dill)
- Granular onion, salt and pepper to taste
- Olive oil
- 6 pieces heavy-duty aluminum foil, about 18 inches long
Instructions
- Zest and juice one of the lemons. Cut the ends off of the other and slice it into six slices. Brush the center of each piece of foil with olive oil. Place a chicken breast on the oiled part of the aluminum foil. Sprinkle chicken breast with granular onion, salt and pepper, then top with 1 teaspoon lemon juice, ΒΌ teaspoon lemon zest, a sprig of dill and slice of lemon. Fold foil to make a tent for the chicken to cook in; first folding and sealing the top, then the sides. Place foil tents on the grill; cook until juices are clear and chicken is cooked through. Be careful opening the foil tent to check the chicken as hot steam will escape.
