Fruit Pizza
This is one of my favorite springtime desserts. You can change it up by using different fruits. It's a great way to get your kids to try new things!
Ingredients
- ½ recipe Sugar Cookie dough
- 2 cups sliced fruit (strawberries, kiwi, Mandarin oranges, pineapple, blueberries, mango, etc.)
- 8 oz. cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp. vanilla
Instructions
- Line a baking stone with parchment paper (rectangular or round is fine).
- Pat sugar cookie dough to about 1/2 inch thickness, leaving room at the edge of the baking stone for the cookie to spread while baking (about 2 inches).
- Bake cookie at 350 degrees until cooked through and browned, about 20 minutes.
- Allow cookie to cool completely before decorating.
- In a medium-sized bowl, mix together the cream cheese, powdered sugar and vanilla.
- Spread evenly over the cookie surface.
- Decorate with sliced fruit and serve.
- Refrigerate any leftovers immediately.
