Crispy Parmesan Chicken Tenders
Ingredients
- 1 pound chicken breast tenderloins
- 1 egg, beaten
- 1 Tbsp water
- 1 clove minced garlic
- 1/2 cup crushed whole wheat or bran cereal
- 1/3 cup grated Parmesan cheese
- 1 1/2 tsp Italian seasoning
- pan coating spray
- 1 1/2 cups marinara sauce
- 8 oz. uncooked pasta
Instructions
- Preheat oven to 425 degrees F. Line a cookie sheet with foil and spray with pan coating spray. In a shallow bowl, mix together the egg, water and minced garlic. In a second bowl, combine the crushed cereal, cheese, and Italian seasoning. Dip each tenderloin in the egg mixture, then in the cereal mixture, turning to coat evenly. Place on the prepared baking sheet so that the tenderloins are not touching. Spray the tops with pan coating spray. Cook for 15-20 minutes, until a meat thermometer registers 165 degrees F.
- Meanwhile, prepare the pasta according to package directions and heat the marinara sauce. Toss pasta with sauce and serve alongside the cooked tenderloins.
