Chili
Ingredients
- 2 pounds lean ground beef or turkey
- 2 Tbsp. olive oil
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 lg. can crushed tomatoes
- 1 lg. can tomato sauce
- 1 medium green bell pepper, chopped
- 2 Tbsp. chili powder
- 2 tsp. cumin
- 1/8 tsp. cayenne
- 1 tsp. oregano
- salt and pepper to taste
- 2 cups canned kidney beans, drained and rinsed
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook for about 5 minutes, stirring occasionally. Add the ground beef and cook until completely browned. Drain the meat and break it into pieces if necessary. In a large stock pot, add the beef mixture and remaining ingredients. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 to 2 hours.
