Chicken Gyros

Chicken Gyros

I am always looking for a new way to use leftover roasted chicken. This is a quick weekday dinner.

Ingredients

  • 2 c. sliced roasted chicken
  • 2 Tbsp. fresh squeezed lemon juice
  • 2 tsp. Greek seasoning
  • ½ tsp. paprika
  • ½ c. cucumber, seeded and chopped
  • ¼ c. red onion, chopped
  • 6 oz. fat-free plain Greek yogurt
  • 6 ea. Whole wheat pita rounds
  • 3 c. mixed salad greens

Instructions

  1. Toss chicken, lemon juice, Greek seasoning and paprika; set aside.
  2. In a separate bowl, stir the chopped cucumber and red onion into the Greek yogurt.
  3. Cut pita bread in half and split open the pocket.
  4. Stuff with mixed salad greens and chicken mixture.
  5. Spoon a little sauce over each pita and serve immediately.
