Chicken Gyros
I am always looking for a new way to use leftover roasted chicken. This is a quick weekday dinner.
Ingredients
- 2 c. sliced roasted chicken
- 2 Tbsp. fresh squeezed lemon juice
- 2 tsp. Greek seasoning
- ½ tsp. paprika
- ½ c. cucumber, seeded and chopped
- ¼ c. red onion, chopped
- 6 oz. fat-free plain Greek yogurt
- 6 ea. Whole wheat pita rounds
- 3 c. mixed salad greens
Instructions
- Toss chicken, lemon juice, Greek seasoning and paprika; set aside.
- In a separate bowl, stir the chopped cucumber and red onion into the Greek yogurt.
- Cut pita bread in half and split open the pocket.
- Stuff with mixed salad greens and chicken mixture.
- Spoon a little sauce over each pita and serve immediately.
