Cheesesteak Sandwiches
A lighter version that can save you as much as 600 calories compared to the fast-food alternative.
Ingredients
- 2 Tbsp. non-fat Greek yogurt
- 2 Tbsp. olive-oil based mayonnaise
- 1/4 cup bleu cheese, crumbled
- 1 pound flank steak (skirt steak or a sirloin could also be substituted)
- 2 cloves garlic, minced
- 4 each whole wheat sandwich rolls
- 2 cups mixed baby greens
- 1 cup thinly sliced tomatoes
- 2 cups sliced red onions
- 1 Tbsp. olive oil
- sea salt
- 1 Tbsp. balsamic vinegar
- black pepper
Instructions
- Make bleu cheese sauce by mixing together yogurt, mayonnaise and bler cheese; set aside.
- In a small saucepan, heat olive oil.
- Add sliced onions and a dash of sea salt.
- Reduce heat to medium-low and cover.
- Cook, stirring occasionally, until the onions are a caramel color, about 20-25 minutes.
- Remove cover and add balsamic vinegar and a dash of black pepper.
- Cook for about 5 more minutes.
- While the onions are caramelizing, heat a grill (or grill pan) until it is hot.
- Season the beef with minced garlic, sea salt and pepper.
- Grill on each side for 3 to 4 minutes (for medium rare) and let meat rest for 5 minutes before slicing thinly.
- Assemble sandwiches with bleu cheese sauce, caramelized onions, beef. mixed greens and tomato.
