Cheddar Stuffed Chicken Breasts
Something different for the grill.
Ingredients
- 4 boneless, skinless chicken breast halves
- sea salt & pepper to taste
- 3 oz. cheddar cheese
- 1 Tbsp. butter, melted
- 1/3 cup sour cream
- 1/4 cup salsa
Instructions
- Heat gas or charcoal grill. Between sheets of plastic wrap or waxed paper; place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Sprinkle chicken with salt and pepper.
- Cut cheese into slices about 3 x 1 x 1/4 inch; one per serving. Place 1 slice in center of each chicken breast. Roll chicken around cheese, folding in sides. Brush rolls with butter. Carefully brush grill rack with oil. Place chicken rolls seam-side down on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning after 10 minutes, or until the temperature is 170 degrees F.
- Serve chicken with sour cream and salsa.
