Buttermilk Pancakes
Ingredients
- 1¾ cups unbleached flour
- ¼ cup whey protein powder
- 2 Tbsp. sugar
- 2 tsp. baking powder
- ¼ cup melted butter or oil
- 2¼ cups buttermilk
- 2 tsp. vanilla
- 2 eggs, slightly beaten
Instructions
- In a large bowl, combine dry ingredients. In a separate bowl, combine wet ingredients. Make a well in the center of the dry ingredients. Pour wet ingredients into bowl of dry ingredients and mix just until combined. Batter will be a little lumpy.
- Heat a frying pan or griddle to medium heat and grease. Using a ¼ cup measure, drop batter onto griddle. Cook until pancake is bubbly and appears dry around the edge. Flip pancakes over and cook until browned.
- Serve with warm syrup or cooked fruit.
- Tip: If you don't have any whey protein powder or want to make "traditional" buttermilk pancakes, omit the protein powder and increase the flour to 2 cups.
