Brown Sugar Glazed Salmon with Kale Chips
Ingredients
- 1 pound skinless salmon fillets
- 1/4 cup brown sugar
- 1 Tbsp. olive oil
- 1 Tbsp. Dijon-style mustard
- sea salt and pepper to taste
- 1 bunch kale
- 2 Tbsp. olive oil
- 1 tsp. sea salt
Instructions
- For Salmon:
- Preheat oven to 325 degrees F. Line a baking sheet with foil and brush lightly with olive oil. In a bowl, whisk together the brown sugar, olive oil, mustard, and a little sea salt and pepper. Place the salmon on the baking sheet, then brush the glaze over the fillets. Bake for 25 minutes, or until fillets flake easily with a fork.
- For Kale Chips:
- Wash and dry kale leaves. Tear into bite-size pieces, removing stems (stems can be discarded or reserved for another use). Place the kale pieces into a gallon-size reclosable bag. Add the olive oil and shake to coat leaves. Spread out evenly on a foil-lined baking sheet that has been lightly oiled. Sprinkle leaves with sea salt. Bake at 325 degrees F for 20 minutes, or increase heat to 375 degrees F and bake for 10-12 minutes.
