Broccoli Salad
This is a great vegetable mix that is appealing and crunchy. The vinaigrette-based dressing allows the flavors to come through without being heavy.
Ingredients
- 1 head broccoli, chopped into bite-sized florets
- 1 cup carrots, sliced thin
- 1 can black olives, drained
- 1 can sliced water chestnuts, drained
- 1 pkg. cherry tomatoes
- 3-4 green onions, sliced
- 1/2 cup Italian dressing
Instructions
- Lightly steam broccoli and carrots for 2 to 3 minutes to soften them (they will still have a slight crunch). Combine steamed vegetables and remaining ingredients in a plastic or glass bowl and toss together. Chill before serving.
