BLT’s with Avocado

A quick summer dinner doesn't have to be boring. Make these BLTs extra-special with the addition of avocados (and maybe some heirloom tomatoes from the farmer's market). Swapping avocado for the mayo gives you an extra veggie without even thinking about it. Make it even healthier by substituting turkey bacon.

Ingredients

  • 1 pkg. thick-cut bacon
  • 8 slices whole wheat bread, toasted
  • 1 each tomato, cut into thick slices
  • 1 head butter lettuce
  • 1 each ripe avocado
  • 1 tsp. lime juice
  • sea salt and pepper to taste

Instructions

  1. Cook bacon completely, either on the stove top or in the microwave.
  2. In a bowl, mash the avocado with the lime juice.
  3. Add a pinch of sea salt.
  4. Season tomato slices with sea salt and pepper to taste.
  5. Spread some of the avocado mixture on each slice of bread.
  6. Assemble sandwiches with bacon, lettuce leaves, and seasoned tomato slices.
