Baked Salmon with Thyme
A healthy family meal with lots of taste. Thyme is a hearty perennial herb that comes back early in the Spring.
Ingredients
- 1 pound salmon fillets with the skin on
- 2 Tbsp. olive oil
- 1 Tbsp. fresh lemon zest
- 1 Tbsp. chopped fresh thyme
- sea salt and pepper to taste
Instructions
- Preheat the oven to 275 degrees.
- Lightly brush the bottom of a 9x13 glass baking dish with olive oil, and lay the salmon fillets skin-side down in the dish.
- Mix together the olive oil, lemon zest and thyme, brush evenly over the fillets.
- Season with salt and pepper, then let the fillets stand for 10-15 minutes before baking.
- Bake until fish is opaque and flakes easily, about 15 minutes, depending on the thickness of the fish.
