Apricot Coconut Bars
I remember these from when I was a little girl. It's important to use Solo brand filling - others are too runny and the result isn't very good.
Ingredients
- 2 cups unbleached flour
- 1 cup sugar
- ½ tsp. baking soda
- 1 tsp. salt
- ¾ cup butter
- 1½ cup flaked coconut
- ½ cup walnuts (optional)
- 2 cans Solo brand Apricot cake and pastry filling (look for this with the other pie fillings)
Instructions
- Mix together flour, sugar, baking soda, salt, and butter with a pastry cutter or mixer until it resembles coarse crumbs.
- Stir in the coconut by hand.
- Press half of the mixture into a greased 9x13 inch baking dish.
- Spread the filling evenly over this.
- Sprinkle the remaining mixture and walnuts over the top.
- Bake at 400 degrees for 20-25 minutes.
- Cool before serving.
