Adam’s Favorite Biscotti
Ingredients
- 1 cup slivered almonds
- 2 cups flour (approximately)
- 3/4 cup sugar
- 1 1/4 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 Tbsp. fresh grated orange zest
- 2 eggs, slightly beaten
- 1/2 cup canola or safflower oil
- 1 tsp. vanilla extract
Instructions
- Combine all dry ingredients and slivered almonds into a bowl.
- Add the oil, eggs and vanilla; mix.
- You should be able to handle the dough without it being too sticky -- add flour if necessary.
- Divide dough into two equal parts.
- Form dough into 2 inch diameter logs.
- Place on baking sheet and flatten slightly.
- Bake at 350 degrees for 30 minutes.
- Remove baking sheet from oven and cool for 15 minutes.
- Slice loaves into 1-inch slices.
- Place back on baking sheet, cut side up, and bake for an additional 12 minutes.
- Cool completley.
- Dip in melted chocolate if desired.
